Ingredients

2 squirrels, quartered
1 cup flour
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup milk
1/2 cup dry red wine
1/2 cup cooking oil

1- Combine flour, salt and pepper in a bowl.
2- Pat dry the meat with a paper towel.
3- Dip squirrel pieces in milk, then coat a few pieces at a time with the flour mixture.
4- Heat oil in a frying pan over medium high heat until the oil is hot but not smoking. Drop a little bit of flour in the oil to see if it sizzles.
5- Brown squirrel pieces in the oil on all side. Note: if the meat is not dry, it won't brown.
6- Add wine, cover the pan and simmer for 20 minutes.
7- Remove the lid an reduce the juice by turning up the heat to medium high. Rebrown the squirrel pieces until they are crispy.
